Ingredients:
  • 3T olive oil 
  • 1 Lrg. onion- chopped
  • 4 garlic cloves-chopped
  • 1/4 tsp. red pepper flakes
  • 1/2c. toasted cashew pieces
  • 1/2c. lite coconut milk
  • 2T. lime juice
  • 1/4-1/2 tsp. salt
  • 2tsp. curry powder
  • 1 tsp. grated fresh turmeric or 1/2 tsp. powdered tumeric
  • 2 Lrg. bunches greens- kale or chard-chopped
Procedure:

Saute onions, garlic, pepper flakes in olive oil 10mins. Process cashews, lime juice and salt add milk. Add curry powder and turmeric to onions. Add greens. cover- stir often. Cook 4-6mins or until crisp-tender. Add cashew sause. Serve warm or room temp.
