Ingredients:- 2 boneless, skinless chicken breasts
- 1 Tbsp. chili powder
- 1/2 tsp. garlic powder
- Juice of 1 lime
- 2 onions- thinly sliced
- 2 red and 2 yellow bell peppers- thinly sliced
- 4-6 cloves garlic- minced
- olive oil
Procedure:Slice chicken breasts into 1/2 inch strips. Toss with chili powder, garlic powder, and lime juice. Marinate 15-30mins. Heat 2T olive oil. Add onions and saute until translucent. Add garlic and peppers. Saute until peppers are Al Dente (3-4 min.). Remove from skillet. Add 1T olive oil to skillet and add chicken strips. Season lightly with salt. Saute until cooked through (4-5mins). Add onions and peppers and mix. (Note: serve with warm tortillas, salsa and yogurt cream) |
