Gingered Greens Simmered In Coconut Milk  Email Article To a Friend View Printable Version 

Ingredients:

* 2 Large Bunches of Greens- Washed and Chopped

* 1 Can of Coconut Milk ( from Thailand 'Chaoadacaoh' )

* 1 Medium Sized Onion-Peeled and Chopped

* 10 Cloves of Garlic-Peeled and Minced

* 2(+) tsp. of Minced Ginger

* 1 T. of Red Chili Flakes

* Salt - to taste

* Pepper- to taste

This recipe is delicious without meat, but feel free to add about 1 pound of boneless, skinless chicken cut into bite sized pieces to simmer with greens.

Procedure:

Heat 1/4 a cup of coconut in a large heavy bottomed pot. Add onion, garlic, ginger, and sauté for 3 minutes. Add remaining coconut milk and greens. Stir to coat greens in coconut mixture. If using, add chicken or tofu. Cover and let simmer chicken is cooked and greens are tender. Season with salt and pepper. Serve over long grain brown rice, and with roasted sweet potatoes or pan fried plantains.
