Raita is an light Indian dish used to cool down your mouth when eating spicy food.
Ingredients:
* 1 large cucumber- peeled, seeded and chopped
* 1/2 Cup chopped mint and/or cilantro
* 1 tesp. ground cumin
* 1 jalapeño- finely chopped
* 2 Cups of plain yogurt
* 1/4 tsp. salt
* 1/2 tsp. pepper
Procedure:Combine ingredients, chill and serve. Can be refrigerated for 3 - 4 days.
*** Variations: substitute cucumber with other fruits, such as mango, pear, apple, banana.
