Ingredients:- 1 1/2 c. red lentils- rinsed
- 2 Tbsp. olive oil
- 1 medium onion- chopped
- 4 cloves garlic- minced
- 1 Tbsp. grated ginger
- 1 lemon peel- grated
- 1 tsp. ground cinnamon
- 1/2 tsp. red pepper flakes
- 1 Tbsp. curry powder
- 1 tsp. turmeric
- 1 medium sweet potato- peeled and chopped
- 1 can (13.5 oz) lite coconut milk
- 2 Cups water
- 1/2 - 1 tsp. salt
Procedure:1) Sauté onions in oil until translucent (4-5 mins). 2) Add garlic, red pepper flakes, ginger, lemon peel, cinnamon, curry powder, and turmeric (cook 2-3mins). 3) Add lentils and sweet potato (cook 2-3 mins). 4) Add coconut milk, water and salt. 5) Cover and simmer 25-30 mins. 6) Serve over brown rice. |
