Tomato and Bread Soup  Email Article To a Friend View Printable Version 

Ingredients:
  • 6-8 garlic cloves-minced 
  • 1/4 tsp. red pepper flakes
  • 1/4c. olive oil
  • 1 28oz can whole tomatoes or 2 fresh tomatoes- peeled & seeded
  • 5c. vegetable or chicken broth
  • Lrg. handful herbs (parsley,basil,mint,oregano,chives)- chopped
  • 1 loaf stale dry bread- cubed 1"pieces
  • salt & pepper
  • grated parmesan
Procedure:

Saute garlic and red pepper flakes in olive oil(2-3mins). Add tomatoes, roughly chop with spoon, simmer 15mins. Add bread cubes, broth, herbs, salt and pepper. Stir well, cover and simmer on low 10mins. Rest 1 hour. Reheat, ladle into bowls, sprinkle with parmesan.
