| Ingredients: 1 Onion- chopped 8 Cups of Seasonal Veggies- washed and chopped - Fall... pumkin, greens, sweet potatoes
- Winter... winter squash, greens, cabbage, brocolli, cauliflower
- Spring... carrots, peas, potatoes, eggplant, greenbeans
- Summer... summer squash, eggplant, greenbeans
2 Cups Coconut Milk 1 Cup Water or Vegetable Stock (as needed) 2 Tablespoons Olive Oil 2+ Tablespoons Curry Powder Salt to taste Procedure:In a large pot, heat oil and coconut milk. Add the onion and curry powder. Simmer for 5 mins. Add veggies in order of cooking time. (For example- add potatoes first and cook for a few mins before adding greens). Cook covered for 10mins, or less, or when the veggies are just so... to your liking. Stir well, season with the salt and pepper, and serve with brown basmati rice. |
