Start with a bed of your favorite lettuce, and add a variety of fruits, nuts, and vegetables to create a salad full of color, vitamins, and minerals. Top with buttermilk chicken and buttermilk dressing for an extra tasty and filling meal!

Buttermilk Marinade for Chicken

Ingredients:

  • 2 boneless, skinless chicken breasts
  • 1 Cup buttermilk
  • 2 garlic cloves- minced
  • 1 Tbsp. Dijon Mustard
  • 1 tsp. Tabasco Sauce (optional) 
  • Salt and pepper to taste

Procedure:

1) Mix buttermilk, garlic, mustard, tabasco, and salt and pepper in a bowl.

2) In a 9X13 pan, pour mixture over chicken breasts.

3) Refrigerate for 4 - 8 hours.

 

Buttermilk Dressing

Like ranch dressing? You'll love this low-fat version- a creamy buttermilk dressing to top your buttermilk chicken salad.

Ingredients:

  • 1 Cup buttermilk
  • 1 Cup yogurt (preferably yogurt cream)
  • 1 large garlic clove- minced (or fresh dill, if desired)
  • 3 Tbsp. chopped chives
  • Salt to taste

Procedure:

  1. Whisk all ingredients together.
  2. Chill.
