Fresh Tomato Sauce  Email Article To a Friend View Printable Version 

Not sure of what to do with all those tomatoes?  Make some fresh tomato sauce and store it in the freezer for the winter.  Recipe by People's Grocery Cooking Instructor Vigi Molfino. 

Ingredients

  • 3 lbs. Tomatoes (Preferably Roma)
  • 1 Onion-Chopped
  • 2-5 Cloves Garlic-Minced
  • 1 Medium Green Bell Pepper- chopped
  • 1 Medium Red Bell Pepper- chopped
  • 6 Tbsp. Fresh Herbs (Basil, Oregano, Thyme, Marjoram)- finely chopped
  • Red Pepper Flakes-Small Pinch or to Taste
  • 2 Tbsp. Olive Oil
  • 1/2 Cup Red Wine (OPTIONAL)
  • Salt and Pepper- To taste
Procedure

Heat oil in pot. Add onions and saute until translucent. Add peppers and cook until slightly softened. Add garlic and red pepper flakes. Cook 2-3 minutes. Add tomatoes, herbs, wine, salt and pepper. Simmer for 30 minutes to 1 hour until thickened.
