Chopped Salad with Orange Vinaigrette

ORANGE VINAIGRETTE:

Ingredients:

1/2 cup orange juice
1/4 cup rice vinegar or white wine vinegar
1/2 teaspoon grated ginger
1/2 teaspoon grated garlic
1/4 cup olive oil
1/4 cup canola oil
      Pinch of salt

Procedure:

1) Place all ingredients in jar and cover.

2) Shake.

(Note: can be refrigerated up to 5 days)

CHOPPED SALAD:

Ingredients:

1/2 head cabbage, chopped
   2 bunches radishes, chopped
   2 carrots, grated
   1 small jicama, coarsely chopped

Procedure:

1) Mix all ingredients in a bowl. Toss with orange vinaigrette. Refrigerate 1 hour to soften cabbage.
