Turkey and Dressing Meatloaf

Adaptation of a Rachel Ray recipe

Ingredients:

  • 2 Cups Dried Bread Cubes (or unseasoned stuffing mix)
  • 2 Cups Chicken Broth
  • 2 lbs. Ground Turkey
  • 1 Onion- chopped
  • 3 Celery Stalks- finely chopped
  • 1/2 Green Pepper- finely chopped
  • 1 Egg
  • 1 1/2 tsp. Salt
  • 1/2 tsp. Pepper
  • 1 Tbsp. Poultry Seasoning

Procedure:

Soak bread cubes in broth (15mins). Mix soaked cubes with the rest of the ingredients. Place on rimmed baking sheet. Shape into oval mound. Drizzle with olive oil. Bake at 400 degrees for 1 hour.
