Meatball Ingredients:
  • 1/2lb ground beef
  • 1/4lb ground turkey
  • thyme- chopped
  • 4T parsley- chopped
  • 2T oregano- chopped
  • 2T mint- chopped
  • 4 Lrg garlic cloves- finely chopped
  • 1/2c dried bread crumbs
  • pinch paprika
  • 1/2tsp pepper
  • 1 egg- beaten
Procedure:

Mix all ingredients well (with hands). Measure out teaspoon-sized portions. Shape into balls.

Soup Ingredients:
  • 2T olive oil
  • 1 Lrg onion- chopped
  • 2 med. carrots- chopped
  • 2 ribs celery- chopped
  • 4 Lrg. garlic cloves- chopped
  • 1 (28oz) can of diced tomatoes
  • 2c kale- chopped
  • 2c cabbage- chopped:preferaby savoy or napa
  • 1c uncooked small pasta- orzo, ditalini, or spaghetti broken into small pieces:perferably whole wheat
  • 1/2 tsp pepper
  • 1/2 tsp salt
  • 4c low-sodium chicken or vegetable broth
Procedure:

Cook onions, carrots, garlic and celery in oil (4-5mins). Add salt and pepper, cook for 10mins. Stir in tomatoes, broth, and 2 cups of water. Cover and cook for 10mins until boiling. Add meatballs, pasta and cover+simmer for 10mins. Add kale and cabbage. Simmer (5mins).
