Ingredients: - 1 1/2 Italian chicken sausage- casings removed and crumbled
- 2 Large onions-halved and thinly sliced
- 4 Garlic cloves-minced
- 2 Bunches kale-stemsremoved and coarsely chopped
- Salt and pepper
- 9 Whole wheat or multi-grain lasagna noodles-each broken crosswise into 6 pieces
- 3 Cups part-skim ricotta cheese
- 1/2 Cup finely grated parmesan or pecoring cheese
Procedure: In Large Skillet:cook sausage until browned(5 minutes).Add onions,cover and cook until softened(5 minues).Uncover; cook stirring occassionally until golden brown(10-15 minutes). Add garlic pot into large bowl. Add Kale and 1/2 cup water to skillet.Season with salt and pepper.Cover and cook until tender(10-15 mnutes). Drain. Add to bowl with onions. Meanwhile,cook noodles 2 minutes less than package instructions. Drain:rinse under cold water. Add noodles,ricotta, 1 1/2 tsp. salt and 1/2 teaspoon pepper to bowl.Toss.Pour into 9" X 13" baking dish.Sprinkle with cheese. Bake at 400 degrees until golden brown (40 minutes).Cool 10 minutes befor serving. (adapted from a recipe in everyday food) |
