Ingredients 4 Ripe Avocados (a little soft when given a squeeze, but not mushy)
1 bunch Cilantro
1-2 Tbsp. Lime Juice
A dash of salt
(Optional) 1 medium red onion- diced
(Optional) 2 Roma tomatoes (or any firm tomato)- seeded and diced
(Optional) 1 can corn
(Optional) 1 hot pepper, such as serrano or habañero- very finely chopped
Procedure
1) Chop cilantro finely. You can use the stems if you like, but be sure to chop in very small pieces.
2) Cut avocadoes in half. Using a sharp knife, make cuts horizontally and vertically across the green flesh. Scoop out the flesh with a spoon into a bowl. Avocado should come out in chunks.
3) Add the cilantro, lime juice, salt, and any of the optional ingredients to the avocadoes.
4) Mix together. If you want chunky guacamole don't smush the avocadoes, but if you like it mushy feel free to smash em up! Enjoy with tortilla chips or on your fajitas.
