Ingredients:

*1/3 a cup of Mixture of Chopped Fresh Herbs- Finely Chopped

(Oregano, Marjoram, Basil, Thyme, Rosemary, Mint, etc.)

*4-6 Cloves Garlic- minced

*1/4 tsp. of Salt

*1/8 tsp. of Pepper

*Olive Oil

*8 Chicken pieces with skin (Thighs/ Drumsticks)

Procedure:

Mix garlic, herbs salt and pepper. Moisten lightly with olive oil. Loosen the skin of the chicken, and put garlic herb mixture under the skin, and massage to distribute. Season both sides with salt and pepper. Place in pan. Skin side up and lightly drizzle with olive oil. Bake at 375° for 45 min. or until done. (180°on thermometer)

**Remove the skin Before serving (optional, but better for you!)
