Recipe by Jason Harvey, founder and Executive Director of our sister organization, Oakland Food Connection. Jason demonstrated this recipe at People's Grocery's January 2008 Grub Party. Ingredients 1/2 tsp. freshly ground cinnamon 1 tsp. ground nutmeg 1/4 cup cranberries 1/2 cup shreaded coconut 2 tsp ground flax seed ( optional) Procedure Cut 3 apples into eights, then slice into small chips. Wash and scrub 3 carrots and 2 beets, cut into quarters, and shred Toss together ingredients well in a large bowl. Mix in above ingredients with shredded winter vegetables Toss in 1/2 cup fresh coconut milk to salad as dressing. Eat Well!! Serves 4-6 |
