Omega-Coconut Carrot Beet and Apple Salad  Email Article To a Friend View Printable Version 

Recipe by Jason Harvey, founder and Executive Director of our sister organization, Oakland Food Connection. Jason demonstrated this recipe at People's Grocery's January 2008 Grub Party.

Ingredients

1/2 tsp. freshly ground cinnamon

1 tsp. ground nutmeg

1/4 cup cranberries

1/2 cup shreaded coconut

2 tsp ground flax seed ( optional)

Procedure

Cut 3 apples into eights, then slice into small chips.

Wash and scrub 3 carrots and 2 beets, cut into quarters, and shred

Toss together ingredients well in a large bowl.

Mix in above ingredients with shredded winter vegetables

Toss in 1/2 cup fresh coconut milk to salad as dressing.

Eat Well!!

Serves 4-6
